Banana Chips
The raw banana after removing the jacket is kept in a vessel with water. It is then sliced into thin wafers. The wafers are then deep fried in a huge wok of vegetable oil. A pinch of turmeric and salt to taste is added when the wafers are almost done. Allow to cool before storing away. Take care not to let it cool for too long or it will lose its crispiness.

Banana chips coated with jaggery
One of the most important elements of a traditional feast or ‘Sadya’. It is a sweet snack made of raw banana fried and coated with jaggery (raw form of sugar). Raw banana is cut into thick slices after splitting the banana into two equal parts vertically. These are then fried in vegetable oil with some salt to taste. The chips are allowed to cool. Make a jaggery solution of thread consistency. Dip the chips in the hot solution for a neat jaggery coat. Allow to cool. Store away.
 
   Kozhi Curry
Chicken in spicy gravy

Chicken: 1 kg
Nilamel’s chicken masala: 4 tbsp
Onions sliced : 1 cup
Ginger: 2 inch long piece
Garlic: 3
Green chillies: 4

Clean chicken pieces and marinate in 2 tbsp Nilamel’s chicken masala and salt. Make ginger-garlic-green chillies paste and fry it with onions. Add Nilamel’s chicken masala and fry a bit. Now add chicken pieces. Serve hot with appam.
